I think I found the air fuel solution 2 Years, 5 Months ago  
After an exhaustive search (10 minutes), I think I found the info I was looking for. Take a 4 wire universal o2 sensor, connect the heater circuit to 12 volts and ground and then measure the other 2 wires with a volt meter. I'm thinking I can place the o2 sensor all the way in either pipe till it stops at the baffle and get an accurate enough reading, since the exhaust would be pushing out and shouldn't allow any air in. What do you guys think? (Not you smart ass).

That sure left out alot of suggestions

I would think it would rattle around making noise or could.Never hurts to try something new then we'll all know.

I'm not leaving it there. Its just to measure the o2 sensor voltage at idle and part throttle. I thought about installing an o2 sensor bung in one of the pipes and use an air fuel meter. Then when it was set up, remove the sensor and use a block off bolt, but thats more work than i wanna do and a lot more money than I'm willing to spend.

I was looking at air/fuel guages and I saw an optional sensor holder that held the wideband O2 sensor and was inserted about 8" or 10" up the tail pipe. I think they said it was not the prefered method but would work, seems to me it might be the prefered for 2 into 2 exhaust.
I am interested in your project. It seems to me also that if I read the voltage on the sensor it would be a straight conversion to A/F ratio.
And cheaper that a $500 direct read guage.

I did find plans online for a make your own air fuel meter using 10 led diodes, another diode, 2 resisters and a chip. It had wiring diagram and all. I'll search and see if I can find the sensor holder your refering to. I could always duct tape a volt meter to the handles bars if I had something to secure the sensor better.
