Now I find If I open the choke at any position it's a no go. I have to give it a few twists of the throttle then manually hold it open
to keep it running. If I release the throttle it dies. After it's warm no problems.

By twisting the throttle while it's warming up you are taking the place of the choke ... in other words, you are supplying the extra fuel that the choke would normally supply.

It's not a 'running to rich' problem, otherwise you would stall the engine when you twist the throttle .... even more fuel.

When you took your choke apart you screwed something up ... that's the first place you should be looking to fix the startup problem, not changing out the main jet (although it probably is on the rich side),
