What advantages will I gain when I remove my AIS from a 2000 Roadstar???

you wont here the ais buzzing as you ride, with aftermarket pipes you wont have the poping on decell, and it cleans up the engine area

there is absolutely no performance gains by removing AIS.

AIR INDUCTION SYSTEM
AIR INJECTION
The air induction system burns unburned
exhaust gases by injecting fresh air (secondary
air) into the exhaust port, reducing
the emission of hydrocarbons.
When there is negative pressure at the
exhaust port, the reed valve opens, allowing
secondary air to flow into the exhaust
port. The required temperature for burning
the unburned exhaust gases is approximately
600 to 700 ˚C (1,112 to 1,292 ˚F).

You get to put some expended .45 ACP casings on your bike... always cooler that way.

No performance gains are noticed, however you won't get that annoying chirping sound and it looks cleaner on the front side and the left side with no lines cluttering up the engine. Popping on decel also was eliminated. I didn't use 45 casings as some guys used, i bought a plug kit from the dealer.

Pretty much nothing as far as advantages.
Only reasons to remove it:
if you think it's ugly to you.
if you think the popping on deceleration is annoying.
Other than that, no reason...
I removed it cause everybody else does. After removing it I thought big whoop, why did I waste my time and money
