You could lower it for her with the flip and grind if she's sorta light.
I would get her on the scoot and tell her to spread her feet out and forward to balance with knees straight if possible.
If she uses her knees bent while balancing, she will tip back and forth. Make sure she stops straight. If she tends to turn while stopping, she will go down or fight to keep the bike up.
Also, try using a half tank of gas until she gets used to the feel of the bike.

The first thing I learned when I began to ride was that you have to be the boss of your bike. You need to ride it or it will ride you.
I think that's why my wife will never ride. She's not the boss and I watched an old bike of mine ride her butt off into a field. Only her pride got hurt. The bike got a new dent in the tank.
Funny thing was I let her ride the bike around with me on the back for maybe 100 miles or so. She did great. Even got her permit to ride. Her first solo was her last. That was almost 20 years ago. I'm still trying to get her to try it again.

I predict you won't have time to mod a new bike. You are going to be too busy replacing turn signals, rear view mirrors, brake and clutch handles and such.

Like Rayjay said, lower it.
My girlfriend is 5'4" and didn't even come close to touching her feet to the ground on my R*. Ended up doing the flip and grind on the rear and lowered the front 1.5". With the stock seat it was tad too high still so I laid a low profile seat from another bike on it and she was able to stand it up and lean it side to side without dropping it she even held it up for as a while without her hands on the bars. She was all excited about having a bike to ride until I put the apes on it which was too high for her. Now she's wanting me to lower my heritage for her until she gets her a Street Bob done the way she wants it.

My Girl is 5'3 and can out ride most guys I know! She gets on her bike and rides it like she stole it!
That and her flaming red hair is what attracted me to her in the first place lol.
That being said.....My roadie is entirly to large for her. Lucklily for me she is smart enough to know that to! How can you ride safley when you cant even get your feet flat on the ground?
She rides a 650 VStar that just the right size for her to ride SAFE!
Know your limitations and what you can and cannot do. Dont let pride get in your way of trying to be cool.
