one of the easiest bikes to start from is an old airhead 2 valve beemer.
the frame is just right as is the tank, the seat easy to re-upholster with a bumpstop on it, pegs rear enough back without being silly.
they´re a doddle to work on, spares are plentiful and dirt cheap, and they go well enough to be entertaining. look for an R65 (that and the r45 were unique designs unlike the rest of the range) or and R80. with the R80 you can fit the barrels and heads from the R100 as the bottom end and crank throw was the same.
along similar lines, a V1000 guzzi 2 valver is also a good buy. base model examples shouldn´t be hard to find or too expensive.

I had a 850-T Guzzi back in the day, Hell of A ride. I find myself looking on ebay and other spots for em'. I'll probably do it when I get a garage built.

Good stuff. I've been looking at some of the "traditional" cafe racer bikes (Norton, BSA, Triumph, BMW, etc.). Those bikes certainly come with a premium price! Even some Honda and Suzuki bikes are pretty expensive.
Not sure if I can afford the pleasure... (as I have some many "wants" . But it's fun to enterain the idea.
THANKS FOR YOU INPUT!

Honda also had a turbo-charged version of that engine. As I remember it was crazy fast and would make an excellent cafe racer. Fast as all get out, light weight, and handles well.

avoid the 500 turbo. any around now will be totally knackered apart from collectors items which will cost a bomb. spares are non-existent.
it wasn´t a great success. it was 100lbs heavier than the standard CX, so the power gains were offset by the weight gain. the CX650 turbo was far better.
with the model i posted, it was mainly done with standard honda parts apart from the seat, silencers, and bars.
the base bike is a first series CX500 with wheels and forks off the custom model, revcount seems to be cb750/900, switchgear and brake master from the C variant. tank and sidepanels are standard.
as you might have guessed, i´m a bit of a CX anorak
