As you can see, it is some kind of adjustment knob, located right under the air intake box, and looks like it travels all the way up to the carb. I think it's the idle adjustment, but not sure....

It's right in front of and to the left of the forward muffler bearing.
They put it there so you don't hit it by accident.

I eliminated that knob and went to an auto adjusting idle governor off my Harley Davison Lawn mower and made it fit.

It's the red switch on the throttle side, sometimes referred to as a 'kill switch'. If nitrous is not used it will shut the engine down.

On a side note, in this vid, do you think should remove the AIS to prevent the flames out the exhaust?

are you using an rpm gauge? when the idle is set to OEM spec it does seem a little fast.
