Loud is good, if you like it, most replacement pipes are much louder than stock.
the 2-1 megacone will give best torque results most of the time..
Duals are probably the nicest look, and most pipes 2-2 like longshots and 10 others that look similar to them can be loud with and without baffles.
You need to decide what look you prefer #1, than how much tweak time you want to be doing, shorter pipes and no baffles tend to drop back pressure and become a little more finicky to tune as you loose some low end torque.#2, but thats what the clutch is for,
I like my Powershots, and my brother has the Longshots his bike is a little louder..
haven't taken the baffles out drive too much and would be deaf in no time..

I had vance and hines long shots installed about a month ago and I love them, I don't think they are to loud, a friend of mine has Cobras on his VTX 1300, and his is louder than mine, just some info,

I put on cobra Boulevards, loud but too harsh. I switched those out with Road House slip ons, nice throaty tone with baffles in, very loud with out baffles, still good tone. I run them with the baffles in and the fiber wrap removed.

I have the HK 2.75s,baffles have a nice rumble,but seem to have alot of back-pressure,took them out,bike ran better,but now im deaf!!!baffles are back in.....  would actually like to see if HK has a half baffle...anybody heard??

cman if you get a short 1 3/4 pipe at AutoZone and put it in the rear of the baffle it will give you a very pleasing sound. You can also mod you existing baffles by removing the 2" outer shield of the baffle and weld on a 2 1/2" pipe from AutoZone in place of it. While you have the outer shield off cut off the front half of the perforated pipe (one that goes on the head pipe) but the reducer portion to weld back on or buy a same size reducer (2 3/8" OD to 1 3/4" ID)to put in the new outer pipe. Wrap the back portion that is left inside the baffle with sound deading material and leave the inside perforated pipe end open. Yes take the baffle to the auto store and get a short (1 3/4" OD) pipe about three inches long to fit just inside the rear of the baffle. It should be long enough to end flush with the billet end caps. Drill two holes for sheet metal screws like is shown on mine 180 degrees apart and put screws in to hold it in. The reason they sound so harsh is the large opening in the pipe just after the baffle.
