Huskerbob,
I am exactly 5'8" but one other thing to remember with the mustang is that it moves you forward about an inch or 2 closer to the tank than a stock seat. It was just enough to make me have to slightly readjust my highway pegs after I switched it out.
I have never had too many back problems so I found that without the drivers backrest worked out good for me. The passenger pillon gives me just enough support for the long rides but doesnt get in the way when getting on and off the scoot.
Its gonna be a personal thing for you to decide. If you know anyone who has one, see if you can give it a try. Other than that, figure what's best for your back and just go with it.
