I know, another jetting question, but I need help 3 Months, 3 Weeks ago

Hi guys, I just hit 1050 miles on my 2007 RS 1700. I just installed a set of V&H long shots, and an open K&N filter. Took the bike on the hwy and couldnt accelerate past 40mph. I know I need more fuel, so I bought a Speedstar jet kit and followed the tech instructions on this site, but some things arent adding up. My main jet is a 182.5, but the jet kit only goes to 175. Also after reading other tech articles, I am also going to radius the manifold, install a larger seat valve, block off the AIS. What main jet, needle clip, and pilot jet do I need? any help will be greatly appreciated..I dont want to mess this up and I know you guys are great
