There is a tool for fxing your problem, its called a thread chaser, very similar to a tap but i think but not totally sure, that it is fractionaly smaller than a tap and therefore won't actualy cut into the metal of the head. They are specificly desiegned for spark plug threads. And yes grease or a cutting compound paste will stop any debris falling in. Its most likley only carbon build up.
