Remember, you haven't rode a bike is years, so some of it might be just getting used to riding again. I keep my tires at 40 F & R. Just relax and if she wants to dance, let her dance a little. She will stay under you. It should feel more stable with the little woman on the back as it lowers the rear and slows the steering a little. Or put a fairing on. Mine seemed to stabilize the bike more at high speed.
