Well, I pushed as hard as I could and I got 2 of the bowl screws off with no problem but the other 2 stripped out. Now what??

They are garbage , as you have now discovered. I personally used a dremel with a cut wheel and cut across the screw so I could use a flat head screwdriver to remove the offending screws. A hacksaw blade would do in a pinch. Once those are out , it's all down hill.
BTW , removing the TPS completely (as you asked last night) is not the end of the world , but requires it be reset by making sure the resistance is right (Ohms) , So to avoid the headache , just leave the TPS on the carb.  BB

The screws that stripped... needle nose Vice-grips.
Choke knob won't stay out... just rotate it in either direction till it stops turning. It's a trick I learned on my H-D's and it works on the Roadie too.

I got the screws off thanks to the Dremel!! Carb is off and I took out the jets and cleaned them as best I could. I'm heading out to Home Depot in a bit to look for the replacement screws. Hopefully I can get everything back together again.
By the way, I took off the vacum slide cover to clean in there. Was that wrong??

Just be careful with the diaphram and make sure not to tear it. If you ever do any jetting you'll have it off more than a few times since that's where the needle is.
Float bowl screws are 4mmx10mm.
