being able to cruise at lower rpm and still stay in 5th was one of the big advantages.. I'm not a big guy and the wife is 115 lbs..but it was all 2up riding...I was wondering if the hot weather was contributing the good mileage?

Nope ... I have to disagree with you.

You have it backwards .... it's 57 m/Imperial Gallon or 47 m/ US Gallon.

A UK gallon is bigger that a US gallon so for the same number of gallons you would go further on a UK.

Yes ... you are rich on the main but lean on the needle so cruising in 5th at 100 kph (you were going speed limit right ) you wold be mainly on the needle and so you should get good mileage.
