You can tighten the large nut a bit to make it stay out. Not too tight; you can break it.
I also found that it's like my previous H-D's. Pull it out to where you want it and twist it clockwise or counter- clockwise and it will hold in place. Just a slight twist.

Glad that question was asked about the choke pulling itself in. I was just into the carb....again.....and it was doing this for the first time. Thanks for the advice

Interesting topic, I was just about to post something like this.

My bike won't start with the choke out. It'll crank and crank, but nothing. However my bike starts first crank from cold with it in. Problem is, I can't touch the throttle for a good 30 seconds or it will die instantly on me. Then I look silly. Sometimes it dies anyways and I have to restart it. It always pops first crank though. Initially I thought that was a good thing, but the 'don't touch the throttle' bit has me wondering.

Mine does the same thing after I push it in 1/4 from full. It's kind of nice, almost like an automatic choke I reach down sometimes to push it in, and it's already there! I like it like that.
