I keep all the stuff that i might need at anytime on my ride in the left saddlebag (the logic is that it is the lowest when my kickstand is down and therefore the least accessible) - liner for my leather jacket, scarf, winter gloves, wet-weather pants, warm shirt. The right hand one (the most accessible?) is for the stuff I want to carry on that day - shopping bags, beach gear, paperwork, whatever... This works pretty good but the lefthand one tends to be heavier more often and then sneaks a little lower as it drags the righthand one up a little.

When i travel i use a T-bag. My biggest issues are with the T-bag as the low sissy bar doesn't allow it to attach to a higher and stronger point and the less-than-90 degree angle of the sissy bar and carry rack distort the base of the T-bag. I guess that's another thread though...
