I'm going to give 10W a shot. I won't be able to tell if the damping will be too stiff until riding season starts again.

I chose this weight based on a lot of reading here on the Clinic.

Is there advantage to the heavier weight based on the fact I am a bigger guy or is that's just to do with the spring itself

I have run the 10wt for over 100k with the stock springs and liked it... so I am using the 10wt fork oil with the progressive springs... I will let you know how I like it next week when I get the bike back on the road...

The weight of oil just affects the rebound and compression damping...it won't help the bike take any more load...that's up to the springs.

You could think of it this way...same as your car...the spring handles the load and the shocks handle the compression and rebound damping to quiet any bouncing effect.

The fork springs take the load...the fork oil handles the damping. The heavier fluid won't pass through the port as quickly so it's like buying stiffer shocks for your car.

Most go with 7wt or 10wt old schoolers use automatic tranny fluid, its 10wt but there are some draw backs to it that i cant remember i think one was it thins out and drops it wt rating as it get hotter

When I did mine I did not take the forks off. I used a long (6 foor) piece of clear tubing and sucked the oil up. Put in the correct amount of oil, then the springs, spacer, washer and then the caps. It is a real chore to put the caps back on, I used a socket on them so I would have some extra gripping area. Be very careful they are fine threads and can be stripped easily. So go slow.

The disadvantage to atf is it's not fork oil
atf does not have the additives to keep it from bubbling like fork oil.
atf does not have the additives to condition the oil seals like fork oil.
no disrespect to the atf users but IMHO, you're better off using fork oil.
redline 10wt fork oil or suspension oil was my choice.

I weigh 300 and used 10wt with progressive spring. I like how it feels.
I also have a 1000 pound spring on the rear.
