If you get trim for this, get shorter screws or you might screw into your tires (put your finger on the inside of the fender, you can feel the screw come through), plus the screws aren't chrome. I occasionally remove the backrest and ride a solo seat, but leave the bags on. Its not exactly quick release (unless you consider about 15 minutes quick), its a pain in the arse to get the bags off, the sissy bar off, and then the bag support structure off. I always leave the bags on. Never know when I may need something or need to go to the store to pick up some things. If my bags are off, I'm forced to take my cage .
