Well, I don't know whether to leave well enough alone or not. 
I have my 05' set up with:
DJ175
Pms 2.75
stock pilot
HK pipes
HyperCharger
AIS removed
not ported
WOT test is good, not suddering or stammering,
Choke works well
MPG at 44 (averange last 3 tanks) 
I am satified with the performance and acceleration, but I am wondering if the big motor is being starved? I know there are a lot more Hp's there. I do plan on porting, but should I change the main jet and re-adjust? Will I be able to achieve the mpg I'm getting?
I am inclined to leave alone, but your inputs or advice (or oppinion).

You now have a good baseline setting where you know it runs well. When you do feel "inclined" you can try changing things one at a time to see what happens. It doesn't cost anything but time to 'play'.
You didn't state where your needle is set. I suspect if you move the needle up (clip down) you might get a bit more. Try putting another spacer on (two).
You'll find if you port your manifold you'll be able to tweak a bit more out of the engine.

I knew I was forgetting someting, I have the Needle on the 3rd grove from the top.
Also, I have been watching the carbon build up, in the tail pipe. There is a slight coating after a tank of gas, my expierence tells me that the current setting are very close.
Now, I guess it a matter as you say Doc, I can begin to play some.
I have notice that the rear cylinder is building more carbon (again at the end of the tail pipe), than the front.
Will porting the manifold help even out the air flow and fuel mixture? I suspect I know the answer, by wiser advise sought.

A good porting helps the mix flow better through the carb.
The coating of carbon in the tailpipe is probably from choke use on startup and is not avoidable. Just don't use the choke for an extended period of time. Choke to start, then push it partway in right away, take off and push in after a mile or so (depends outside temp).
If the clip is on 3 with one washer, then try another silver washer. You can also put in on the 4th with one washer. This will richen it up a bit a probably give you a bit more punch.
